Global Kitchen Cookbook Giveaway!

To honor National Nutrition Month, we wanted to host a giveaway on something we’ve been focusing on over at MomDishesItOut: Global Eating!

Watching the various countries compete in the Olympics last month and watching my kids taste new foods while we traveled in Peru got me thinking about the importance of trying new foods and expanding your eating horizons. So, when our friends at Cooking Light sent us the Global Kitchen Cookbook, I knew I had to share it with my readers.

Written by David Joachim, this cookbook features 150 recipes from all over the globe. Just this past Friday, we featured one of their recipes on our blog: Mom Dishes It Out.

A Day at the Beach: So What’s for Lunch?

With school out and warm weather, it can only mean one thing… it’s time to hit the beach!

As bathing suits, towels, sunscreen, cameras, shovels, and pails are being carefully packed up, lunch is usually thrown together at the last minute and sometimes leading to unhealthy food choices. Along with trying to make the healthiest choices, you also have to consider which foods are the safest to bring to the beach and which ones should probably be left at home. But don’t worry, we are here to make packing lunch for the beach a little easier!

In order to make a quick lunch that still tastes good, some planning must be involved. What kinds of foods do your friends and family enjoy? What foods should you leave at home so that you can avoid food contamination at the beach? What foods are the most nutritious and will help keep everyone satisfied and fueled for the day?

Food Safety at the Beach
When considering food safety, many things come to mind but with the addition of the sand and the sun of the beach, food safety takes on a whole new meaning. The biggest thing to consider when it comes to beach safety is the steaming hot temperature. When you combine foods that need to be chilled with the blazing hot sun, things do not end well. According to the FDA’s Qualitative Risk Assessment, once intact fruits and vegetables, such as melons and tomatoes, are cut and protective barriers are open, microorganisms can grow more easily. Once heat and humidity are introduced, the rate at which bacteria grow increases significantly. Therefore, it is best to bring whole fruits and vegetables to the beach. Some ideas for whole fruits and vegetables are oranges, grapes, cherries, strawberries, blueberries, peaches, grape tomatoes, carrots, celery, and raw broccoli. If you decide to bring fruits or vegetables that need to be cut or sliced, it is safer if you do so while you are at the beach. Bringing proper utensils to cut/slice these foods will make it a lot easier. For example, bringing an apple core to slice an apple or a pear is easy. Also, using a knife to slice veggies such as cucumbers or peppers is also quick and simple! Make sure you are storing these foods in appropriate containers and at cool temperatures to keep them fresh before you cut them! Prevent sand from touching the food and fruit juices from leaking; use a lockable container like Sistema or Black+Blum.

Another food that should be avoided at the beach is undercooked chicken, fish, or meat as well as different kinds of “salads”. Not only do these kinds of foods allow for a large number of food borne illnesses, but they also can cause cross contamination with other foods. A research study that appeared in Letters in Applied Microbiology, has recently suggested that Salmonella (one of the most common food borne pathogens) contaminates raw/undercooked chicken and meat products at the highest rates over the summer. Also, different chicken salads, egg salads, and tuna salads can cause cross contamination due to the mayonnaise, if they are not chilled to the correct temperature. These different kinds of “salads” containing mayonnaise can still be enjoyed if they are transported and kept at the appropriate temperature. Foods containing mayonnaise must be stored at 45 deg F or lower. To be sure of this, use freezer gel packs to keep food and beverages cold and at a safe temperature.
These types of foods should be stored in containers that can be kept cold such as Kangovou, which is made from food grade stainless steel.

When keeping food safety in mind at the beach, it is also important to consider how you are going to transport and eat your lunch. It is important to pack your food in a cooler with ice (or ice packs) so that the food stays cold and fresh. Also, finger foods tend to be the easiest for the beach and help to avoid “sandy” lunches, so think whole fruits and sandwiches! Don’t forget to wash any fresh produce you pack with you!

So, what are 5 safe and healthy lunches to bring to the beach?

1. Whole-wheat bread with natural peanut butter and banana – The bread won’t get soggy and the peanut butter and banana will give you fuel for hours!

2. Whole-wheat pita with grilled chicken and veggies with hummus –Pack celery and raw broccoli florets to dip in hummus. Single-serve hummus packs are a great way to eat more healthfully and to enjoy finger foods!

3. Whole wheat crackers with low-fat cheese and a handful of grapes or cherries, and carrots or celery sticks – Having a variety of food can make lunch at the beach fun and make it feel like a picnic!

4. Whole-wheat wrap with lean turkey or lean ham with veggies and homemade trail mix (dried fruit, cereal, and nuts) – Homemade trail mix is a fun and healthy way to eat some of your favorite foods!

5. Grilled chicken sandwich on a whole-wheat bun with dark lettuce – pile more veggies on your sandwich for more flavor!

Don’t forget about snacks! To keep everyone satisfied and happy, think about quick and healthy snacks such as whole fruits, veggie sticks with low fat dip/hummus, homemade trail mix, whole grain granola bars, and popcorn. And don’t forget to pack plenty of water!

Be Hip and Healthy at NYC’s Top Chic Restaurants

Living in NYC is about working hard and playing and who are we kidding, being our best. So while out on the town, Laura Cipullo, will give you her favorite healthy dishes at this urban’s oasis of fun summer restaurants.

Bacaro
Escape the scene and the heat and go underground to this cool bar and restaurant hidden on Division street. This is one restaurant where you can eat the pasta. Opt for the whole wheat linguine with sardines. Skip apps and dessert because you will be filled by the high fiber carbs and healthy omega-3 fatty acids.

Hudson Clearwater
We love the garden at this West Village restaurant. Once a bike store and now a fave of the healthy and hip! Go around the corner to find the sneaky entrance. Get your antioxidants with the calacas cocktail made from beets and lime. It looks healthy but I assure you this is no juice cleanse. Start with the lentil and braised fennel salad and then mindfully move to the entrée of Blackened Sea Bass with the most delicious array of fruits, veggies and even pesto. Hip and healthy could not be better sold!!

North End Grill
Super sleek and super sexy especially for the Wall Street Crowd. So many “yes” choices” at this restaurant. With the focus on fish appetizers and organic foods, you can come here multiple times and get a different meal favoring the healthy side every time. What’s even better is you can walk home along the Hudson River après dinner. This RD’s favorites include Heirloom Cucumbers, Hakurel Turnips, Thai Basil with black pepper and lemon juice with the King Salmom, quinoa entrée. The chicken for two is delicious sans the skin!

The Smith
After work hit the scene uptown or downtown! Start with oysters to share for the table. Low calorie and high protein so it will not spoil your appetite. Get the trout for your best bet of omega-3 fatty acids and moderating carbohydrates. The trout is served over vegetables and frisse. The trout has a kick to it, so beware!! Also, this is not the trout on Menu Pages!! Want to go vegetarian pub style? Choose the vegetable bibimbap. Vegetarian doesn’t mean lick the bowl clean so practice portion control!!

Sorella
Support the slow food movement at Emma Hearst’s new eco-fabulous restaurant. You just feel good being there, admiring the plants growing on the walls. The focus is on seasonal food so the menu will be ever changing. Instead of thinking what is lowest in calories, think like Buddha. Center before your meal. Order what you want, eat mindfully with respect to your body and don’t skip dessert. You can walk away feeling good knowing the food was made with love and locally grown.

What can you get to eat on a college campus in 2011?

1. Stanford University– Who doesn’t love frozen yogurt? Stanford is home to Fraiche Yogurt. Fraiche is a homemade, organic fresh yogurt and frozen yogurt cafe, serving European-style yogurts made from local organic milk and a probiotic-focused culture. Available toppings include fresh-cut fruits, local honeys and purees, toasted nuts, homemade granola, and hand-shaved Callebaut chocolate. Stanford also has lots of vegetarian, vegan, and kosher options. A student-run farmer’s market is also located on campus.

2. Pitzer College– The Shakedown is a student run restaurant at Pitzer, which serves up only the best organic locally grown food. There also is the Pitstop cafe, which is a coffee shop in the academic quad. It has any coffee drink you could want, baked goods, and organic juices!

3. Occidental College– Occidental strives to provide its students with the most organic and local food possible. In its dining hall, Marketplace, the salad bar always carries organic choices including organic spring mix lettuce, tofu and carrots. They often incorporate organic and local ingredients into their homemade cooking. Wednesdays at dinner the Marketplace serves an Organic Baked Potato Bar including russet and sweet potatoes with organic toppings and produce from local farmers. For your sweet tooth, The Cooler, another dining location, features hand-dipped ice cream made by Fosselman’s, a local family owned business.

4. Ohio Wesleyan University– Chartwells, the company that prepares food for dining halls at Ohio Wesleyan University, offers microwaveable meals that students can take away, as well as a program called “My Pantry,” where students can have food individually prepared, or even do their own cooking. You can also get a sweet treat for your birthday at OWU. Bring your ID to the bakery on the first Monday of your birthday month and get a free cupcake!

5. St. Olaf College– St. Olaf is committed to buying locally grown foods whenever possible, including vegetables and herbs from STOGROW, their student-run organic farm, meat and poultry raised without antibiotics or growth hormones, apples from an orchard just minutes from campus and dairy products supplied by Deja Moo, a collective of Midwestern, family-owned farms. Fresh, healthy, and delicious.

6. Warren Wilson College-WWC’s Cowpie Café is a campus favorite, offering healthy and delicious vegetarian and vegan options. Much of the produce from the garden, as well as other local goodies, makes its way into Cowpie’s kitchen. Also, all beef and pork served in Glad, WWC’s all-you-can-eat dining hall, comes straight from the farm.

7. Emory University– Many campuses are beginning to offer farmers markets to their students and the surrounding community, but Emory’s is unique in that it is year-round (except for summer breaks). Emory Farmers Market features fresh, local produce, organic and sustainably produced meat, bread, cheese, honey and other artisan products. In addition to providing delicious, healthy, and convenient food choices to the Emory community, the market encourages students to interact with Georgia farmers, expand their knowledge about healthy eating and sustainable production.

8. Columbia University– Columbia also encourages students to eat locally. Local Honey from Ballards Honey (Roxbury, NY), as well a locally produced, processed and packaged strawberry jam and tomato salsa are served in John Jay Dining Hall and Ferris Booth Commons. For a fall treat, all Columbia’s apples and fresh apple cider are from Red Jacket Orchards, Geneva, NY.

9. Virginia Tech University– For upscale dining on a college campus, there is no better place than VT. Their West End Market features made-to- order items prepared before the customers and offers specialties such as London broil, live Maine lobster, and steak on a daily basis.

10. Bryn Mawr College– This school has an extensive salad bar offering over 40 items made fresh daily (including hummus)! At all meals, students can also find rice and soymilk, a vegan bread selection, veggies burgers, and a variety of freshly steamed rice.

The Best NYC Bites

The experience of eating can be more than fulfilling a basic need. Eating is a sensory experience that can be admired and appreciated whether it is touch, taste, sound, smell and or sight. Eating in moderation is more attainable when being mindful of the five sensory experiences. Dining at a 3 star or even one star Michelin rated restaurant is an experience to be slowly savored. The new NYC restaurants rated by Michelin include Daniel and Eleven Madison Park.  Rouge Tomate with Chef Natalia Hancock (a registered dietitian) has received one star. Go ahead, practice mindfulness and delight your senses while truly experiencing the art of eating at one of these restaurants. I recently enjoyed my culinary adventures at Marc Forgione, and Gotham Bar and Grill (my husband’s fav).
